Thanksgiving Solutions: Sweet Potato Biscuits
A new take on the traditional Thanksgiving side dish.
Biscuits are an essential part of Thanksgiving in the South. A family member requested sweet potato biscuits, but the only recipes I found were made with cooked or canned sweet potato. They tasted gummy and odd, not at all like the flaky biscuits I was used to. So I experimented and came up with these biscuits. I know, I know, they're not "real" Southern biscuits because they include an egg. They're quick to make and you don't even need a rolling pin – just a food processor and a well-floured counter or pastry board. It takes about as long to read these directions as it does to make the biscuits. Once your sweet potato is shredded, you can make these biscuits in about 5 minutes.
